Tropical Chia-Buckwheat Pudding:
Blend the following ingredients and pour into a bowl or jar:
1 cup soy (or any plant milk)
1 scoop coconut flavoured protein powder
1 banana
(the brand I used for this was Genuine Health Fermented Vegan Protein but I couldn't find it on Amazon) (You could also use vanilla flavour...the brand I usually use is Livwell Nutrition

Then add the following ingredients and stir well. Allow to 'set' for a couple of hours or overnight:
2-3 Tbsp chia seeds
2-3 tbsp buckwheat
1 mango, chopped
1 cup strawberries, sliced
1 cup pineapple, sliced
1 cup cherries
1 cup blackberries
Red Lentil Chili w/ smoked Tempeh (Makes 2 large portions)
1 can tomato sauce
2/3 cup red lentils
140g smoked tempeh (use bacon flavoured tempeh as a substitution)
1-2 cups chopped mushrooms
1 cup corn
2 stalks celery
Spices to taste (SORRY I never measure....) - Cumin, smoked paprika, garlic powder, chili powder, turmeric
2 tbsp BBQ sauce
tamari or salt to taste
Method: Pour tomato sauce, spices, 1-2 cups water and lentils into a pot, bring to a boil. Reduce heat and simmer. Add the celery and tempeh and cook until celery and lentils are cooked. Then add the mushrooms and corn and BBQ sauce and cook a few more minutes. Top with nutritional yeast. Serve with whatever your heart desires....pasta, rice, quinoa, steamed greens, on top of a big salad (instead of salad dressing), with cornbread, etc. This was SOOOO GOOD!! :)
